Spicy Banana Cookies
Yield: 4 ½ Dozen
¾ Cup all-purpose flour
¾ Cup whole wheat flour
¾ Teaspoon baking soda
¼ Teaspoon salt
2 Teaspoons ground ginger
¼ Teaspoons ground cinnamon
1/8 Teaspoon ground cloves
1 Banana, peeled
¾ Cup granulated fructose* or granulated sugar
1 Egg, slightly beaten
3 Tablespoons molasses
*Fructose is available in most health food stores
- Preheat oven to 350. Cover baking sheets with parchment paper or grease lightly.
- In medium bowl, combine flours, baking soda, salt and spices.
- Mash banana in large bowl. Blend in fructose, egg and molasses. Mix in flour mixture. Spoon tablespoons of dough, 2 inches apart, onto prepared baking sheets. Bake 10-12 minutes or until golden brown. Remove to wire racks to cool completely.
