Lentil-Tomato Soup

1 tablespoon olive oil
2 cups onion, chopped
1 teaspoon cumin
1 teaspoon chili powder

1/2 teaspoon ground red pepper
1/4 teaspoon salt and white pepper

2 tablespoons garlic, minced
31/2 cups water
2 1/3 cups dried lentils
1/3 cup fresh cilantro, chopped
6 cups fat-free, less-sodium chicken broth
1 28-ounce can diced tomatoes,
undrained

1. Heat olive oil in a large pot. Add the onion, sauté until tender.
2. Add the cumin and next 4 ingredients (cumin through garlic), sauté.
3. Add chicken broth and tomatoes, bring to a boil. Reduce heat, simmer 1 hour.
4. Cook 3 1/3 c. water and 2 1/3 c. dried lentils together until lentils are tender.
5. Reserve 2 cups lentil mixture. Place half of remaining mixture in blender, process until smooth. Pour pur.ed lentils into pot. Stir in reserved 2 cups lentil mixture. Garnish with fresh chopped cilantro.
