Lime Soup with Tortilla Strips and Chicken
Yield: 6 servings

2 6-inch low-fat tortillas, cut into strips
6 Cups chicken broth or stock
2 Tablespoons fresh cilantro, minced
1 Tablespoon oregano, minced
1 Teaspoon apple cider vinegar
½ Teaspoon ground cumin
2 Tablespoons lime juice
1 6 ounce chicken breast, thinly sliced
½ Cup tomato, chopped and seeded
½ Cup green pepper, chopped
½ Cup onion, chopped
6 Lime slices
2 Tablespoons olive oil

Preheat oven to 425. Spray baking sheet lightly and bake tortilla strips until golden, about 10 minutes.  Remove from oven and let cool.
Mix broth and next 4 ingredients in large saucepan; bring to boil.  Reduce heat; simmer 15 minutes.  Add lime juice; season with salt and pepper.
Meanwhile, heat 2 tablespoons oil in heavy large skillet over medium heat.  Add chicken to skillet, sauté 3 minutes.  Add tomato, pepper, and onion.  Sauté until chicken is cooked through.
Place 1 lime slice in each of the 6 bowls. Ladle soup over lime.  Mound tortilla strips and chicken mixture in center of each bowl.
