Portabella Mushroom Sandwiches
Yield: 6 Servings
6 Portabella mushrooms (about 4 ounces each)
¼ Cup Italian salad dressing
12 Slices Vidalia onion
6 Whole wheat hamburger buns
6 Tablespoons Heartland Marinara Sauce
Remove and discard stems from mushrooms. Using wet paper towel, scrape gills off undersides of mushrooms and wipe off tops. Brush both sides of mushrooms with dressing.
Grill onion slices over medium coals until browned on both sides. Grill mushrooms 2-3 minutes on each side, being careful not to char. Arrange 2 onion slices and 1 mushroom on each bun; top each with 1 Tablespoon marinara.
