Yield: 14 Crepes
½ Cup all-purpose flour
1 Tablespoon sugar
¼ Teaspoon salt
¼ Teaspoon ground cinnamon
1 Cup fat-free (skim) milk
½ Cup cholesterol-free egg substitute
1 Teaspoon canola oil
¼ Teaspoon vanilla
In small bowl, combine dry ingredients.
In medium bowl, whisk together remaining ingredients. Add dry ingredients; whisk until well blended. Cover; refrigerate at least 30 minutes.
Heat 6-inch non-stick skillet or crepe pan over medium-high heat. For each crepe, add 2 tablespoons batter to hot pan, swirling batter around surface of pan to form thin pancake. Cook until bottom of crepe is golden brown, 2-3 minutes. Remove crepe from pan by lifting one edge of crepe and pulling it from pan. Repeat with remaining batter.
