Breakfast is the most important meal of the day, so start it off right with a delicious apricot scone!
Scrumptious Scones

Apricot Scones 1/3 cup dried apricot halves
2 cups all-purpose flour
¼ cup sugar
1½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
¼ cup cold butter, cut into small pieces
¼ cup buttermilk
¼ cup apricot nectar
2 egg whites
1 teaspoon almond extract

1 egg white
1 teaspoon sugar
1 teaspoon water

1. For scones, chop apricots into small pieces; place in small bowl and pour enough hot water over to cover completely. Let apricots stand 30 minutes or until softened and fully rehydrated. Drain; set apricots aside.

2. Preheat oven to 375º. Lightly grease large baking sheet.

3. In medium bowl, combine flour, sugar, baking powder, baking soda and salt. Using pastry blender or electric mixer, cut butter into the dry ingredients until mixture resembles coarse crumbs. In large bowl, combine buttermilk, apricot nectar, egg whites and almond extract; stir in apricots. Pour dry ingredients over buttermilk mixture; stir just until combined. Do not overmix.

4. Pat dough into 8-inch circle, about 1 inch high, on prepared baking sheet. Use a large knife to make four intersecting cuts across the top of dough to form 8 triangles. In small bowl, combine all glaze ingredients; brush over top and into cuts.

5. Bake 35 minutes or until golden brown. Serve warm.

Yield: 8 scones

Five Cooking Tips for a Healthier You in 2012

Would you like to eat healthier this year?  Here are some wonderful cooking tips from www.heart.org that The Heartland staff wholeheartedly endorses!      

Use your time and your freezer wisely. When you cook, make it last longer by preparing enough food for several additional meals. Freeze the leftovers and you’ll have ready-made healthy lunches or dinners for the next time you are simply too tired to cook!

Smoothies are not only delicious, they are nutritious! Throw a banana (you can keep them in the freezer for weeks) into your blender along with frozen berries, kiwi or whatever fruit is around, some orange juice or another favorite juice, fat-free or low-fat yogurt, and protein powder. You can get 4–5 servings of fruit in one glass of a fruity shake.

Eat HealthyPrepared seasonings tend to have high salt content and can increase your risk for high blood pressure. Consider replacing salt with herbs and spices or some of the salt-free seasoning mixes. Use lemon juice, citrus zest or hot chilies to add more flavor.

It’s simple to make muffins and quick breads with less saturated fat and fewer calories. Substitute three ripe, very well-mashed bananas for a 1/2 cup butter, lard, shortening or oil. You can also substitute one cup of applesauce per one cup of these fats.

Choose whole grain (such as whole-wheat flour, oatmeal and whole cornmeal) for part of your ingredients instead of highly refined products.  Whole-wheat flour can be substituted for up to half of all-purpose flour. For example, if a recipe calls for 2 cups of flour, try 1 cup all-purpose flour and 1 cup minus 1 tablespoon whole-wheat flour. It will taste just as good and be better for you!
